Murasaki

A popular sweet potato of Japanese origin, dark purple skin, and whiteflesh that turns a champagne color when cooked. It has a sweet-nutty flavor with a drier, creamier texture than their orange-fleshed counterparts. Matures in 100-120 days. (Vine type.)
