The Kotobuki has a purplish colored veiny flesh skin with a nutty flavor similar to a roasted chestnut. The Kotobuki is great for baking, great in salads, tempura, soups, stews, and stir-fries. Kotobuki sweet potatoes are dryer and not widely used outside of Japanese cooking. Matures in 100+ days. (Vine Type.)
